Preparation

Ingredients should be at room temperature. Preheat the oven to 180°C (160°C with fan). Add the mix, eggs and water to a bowl and beat at high speed for 7–8 minutes, then at low speed for another 2–3 minutes. Pour the batter into a greased tin (filling it between 1/2 and 2/3 full). Bake without opening the oven door until the cake springs back when touched. Remove from the tin immediately and leave to cool on a wire rack.
